        Food trends are evolving so quickly that they are now colliding and overlapping,
        which means serving good food requires more flexibility and invention than ever
        before, according to The Art of Good Food, AAK Foodservice’s new insight paper.
          The paper, produced by the team behind the Lion brand of sauces, dressings and
        condiments, looks at new industry research and offers ideas to help outlets cater for a
        dizzying clash of demands.
          Lion brand manager, Sarah Moor said: “Haute cuisine was once the preserve of
        high-end chefs, but now, in 2019, most foodservice operators need to consider
        the aesthetics of a dish – as well as a world of competing dietary needs and
        lifestyle choices.
          “Customers want more healthier dishes than ever – but they also want indulgent,
        extravagant feasts. They demand not only vegan, vegetarian, gluten-free, dairy-free and
        nut-free dishes, but also higher protein, lower calories, reduced fat, less sugar, high fibre
