Sticky Spiced Mushroom Skewers

A great Chinese-style recipe, served with noodles.

Serves 4

Ingredients

  • 30ml dark soy sauce
  • 15ml Chinese cooking wine
  • 15ml clear honey
  • 5ml vegetable oil
  • 2cm piece root ginger, grated
  • 1 clove garlic, crushed
  • 1/2 tsp Chinese five spice
  • 250g shiitake mushrooms
  • Noodles, griddled
  • Courgettes and peppers to serve

Method

  1. Mix the first 7 ingredients together in a large bowl. Add the mushrooms and stir well until they are coated in the marinade. Cover and leave to marinate in a cool place for at least 1 hour.
  2. Drain the marinade into a small pan and simmer for 1-2 mins until syrupy.
  3. Thread the mushrooms onto skewers then cook over hot barbecue coals or griddle or under a hot grill for about 10 mins, turning frequently and brushing with more of
    the marinade.
  4. Serve hot with noodles and chargrilled peppers and courgettes.
