
Guyanese Lamb Curry
A delicious Caribbean curry.
Ingredients
- 2lb (1kg) diced lamb
- 1 tbsp ghee (clarified butter), or 3 tbsp sunflower oil
- 1 medium onion, finely chopped
- 2-3 cloves garlic, crushed
- 1 heaped tsp freshly grated ginger
- 1 tbsp chopped fresh coriander
- 2 spring onions, chopped with green parts
- 1⁄2 green pepper finely chopped
- 2 sprigs fresh thyme
- 1 scotch bonnet hot pepper
- 2 tbsp curry powder
- 1⁄3 cup water
- 1⁄2 tsp cumin seeds
- 1 medium potato, peeled and cubed
- 1 tsp garam masala
- 1⁄2 cup water approx.
Method
- Heat the ghee in a large heavy saucepan until hot.
- On a high heat, add onions and white part of spring onion and cumin seeds and cook for around 1 minute. Add garlic and cook for a couple of mins.
- Add sprigs of thyme, ginger and green pepper and cook for another minute.
- In a small bowl combine curry powder with a little water to form a runny paste.
- When onions are translucent and golden add curry powder paste and cook on a high heat until paste becomes dry and the aromas of the spices are released.
- Add the lamb and seal the meat by stirring regularly.
- Add the 1⁄2 cup of water (or just enough water to meat level) and bring to the boil. Add the whole scotch bonnet. Reduce heat, put the lid on and simmer for around 30-45 mins.
- Add the potatoes and continue to cook on a low heat until the potatoes are cooked through and the lamb is tender.
- Add the garam masala, fresh coriander and green part of spring onions and stir well. Cook for a further 2-3 minutes.
- Before serving remove scotch bonnet and sprigs of thyme. Serve with steamed rice or bakes.
