
Christmas Pudding
The classic festive pudding recipe
Makes 8 x 900ml basins
Ingredients
- 1.1kg raisins
- 750g sultanas
- 750g currants
- 200g chopped almonds or pine kernels (optional)
- 800g vegetable suet
- 2 oranges, zested and juiced
- 2 apples, grated
- 500g breadcrumbs
- 2 carrots, grated
- 500g plain flour
- 1 tsp baking powder
- 800g soft dark brown sugar
- 12 eggs
- 1 tsp salt
- 1 tsp cinnamon
- 3 tsp mixed spice
- 210g mixed peel
- 310g chopped glace cherries
- 1 glass of brandy
- 1 glass of rum
- 600ml Guinness
Method
- Combine all the ingredients and leave for 24 hours
- Divide between the basins and cover with a cartouche of greaseproof paper. Cover with tinfoil and seal
- Cook in the steamer for 4-5 hours
- Store in the fridge.
