Christmas Pudding

The classic festive pudding recipe

Makes 8 x 900ml basins

Ingredients

  • 1.1kg raisins
  • 750g sultanas
  • 750g currants
  • 200g chopped almonds or pine kernels (optional)
  • 800g vegetable suet
  • 2 oranges, zested and juiced
  • 2 apples, grated
  • 500g breadcrumbs
  • 2 carrots, grated
  • 500g plain flour
  • 1 tsp baking powder
  • 800g soft dark brown sugar
  • 12 eggs
  • 1 tsp salt
  • 1 tsp cinnamon
  • 3 tsp mixed spice
  • 210g mixed peel
  • 310g chopped glace cherries
  • 1 glass of brandy
  • 1 glass of rum
  • 600ml Guinness

Method

  1. Combine all the ingredients and leave for 24 hours
  2. Divide between the basins and cover with a cartouche of greaseproof paper. Cover with tinfoil and seal
  3. Cook in the steamer for 4-5 hours
  4. Store in the fridge.
