Cheddar Gorgeous Soup

This unusual and tasty soup is made with finely grated Mature Cheddar. Just before serving, top with French bread Croutes for an extra special presentation.

Serves 10

Ingredients

  • 150g Mature Cheddar cheese, finely grated
  • 100g Butter
  • 4 Onions, chopped
  • 2 pints Vegetable stock
  • 500g Low-fat soft cheese
  • 4 tbsp Chopped fresh chives or parsley
  • 2 pints Milk
  • 3 tbsp Cornflour
  • 3 French bread slices (not too thick)
  • 150g Garlic cloves, crushed

Method

  1. Melt half the butter in a large, heavy-based saucepan. Add the onions and cook gently for 6-8 minutes, without browning.
  2. Add the vegetable stock and bring to the boil, then simmer for 10-15 minutes.  Transfer to a blender or food processor, add the soft cheese and chives or parsley and blend until smooth.
  3. Return the soup to the saucepan and heat, stirring until the soup
    thickens. Cook gently for 2-3 minutes.
  4. Grill the French bread slice on one side, then spread the other side with butter and crushed garlic. Sprinkle with half the grated cheese, then grill until bubbling.
  5. Before serving, remove the saucepan from the heat and sprinkle in the remaining cheese, stirring as you go. Season. Ladle into bowls and top with garlic croutes and some chopped chives or parsley.
