
Bitter Chocolate Pudding
with chocolate fudge sauce and orange compote
Serves 4
Ingredients
Chocolate Pudding
- 125g unsalted butter (melted)
- 3 eggs
- 125g castor sugar
- 80g plain flour
- 25g cocoa powder
- 125g good quality dark chocolate
Chocolate Fudge Sauce
- 150ml double cream
- 85g unsalted butter
- 25g light brown sugar
- 90g good quality dark chocolate
Blood Orange Compote
- 3 blood oranges (segmented)
- 50ml Grenadine
- 100ml stock syrup
Method
- Whisk eggs and sugar until really thick.
- Sift flour and cocoa powder and fold into mixture with a large metal spoon.
- Fold in the melted butter and chocolate.
- Spoon mixture into 4 greased moulds.
- Steam for 45 minutes.
- Heat the Grenadine and stock syrup, take off heat and then infuse the blood orange segments.
- For the sauce heat the cream, butter and sugar in a small pan, stirring continuously.
- Add the chocolate and stir until melted. Turn out pudding and arrange compote on plate.
- Pour sauce over pudding.
