Bitter Chocolate Pudding

with chocolate fudge sauce and orange compote

Serves 4

Ingredients

Chocolate Pudding

  • 125g unsalted butter (melted)
  • 3 eggs
  • 125g castor sugar
  • 80g plain flour
  • 25g cocoa powder
  • 125g good quality dark chocolate

Chocolate Fudge Sauce

  • 150ml double cream
  • 85g unsalted butter
  • 25g light brown sugar
  • 90g good quality dark chocolate

Blood Orange Compote

  • 3 blood oranges (segmented)
  • 50ml Grenadine
  • 100ml stock syrup

Method

  1. Whisk eggs and sugar until really thick.
  2. Sift flour and cocoa powder and fold into mixture with a large metal spoon.
  3. Fold in the melted butter and chocolate.
  4. Spoon mixture into 4 greased moulds.
  5. Steam for 45 minutes.
  6. Heat the Grenadine and stock syrup, take off heat and then infuse the blood orange segments.
  7. For the sauce heat the cream, butter and sugar in a small pan, stirring continuously.
  8. Add the chocolate and stir until melted. Turn out pudding and arrange compote on plate.
  9. Pour sauce over pudding.
